ZUCCHINI MUFFINS
(ANOTHER USE FOR ALL THOSE HOMEGROWN ZUCCHINI)
3 C. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 ½ tsp. cinnamon
Dash nutmeg
2 C. sugar
4 eggs, beaten
1 C. oil
2 C. grated, unpeeled zucchini
1 tsp. vanilla
1 C. chopped walnuts
½ C. golden raisins
Combine dry ingredients and spices and set aside. Beat together eggs
and sugar in a mixing bowl for 2 minutes. Gradually add oil and beat 2
to 3 minutes. Add zucchini and vanilla. Stir in walnuts and raisins. Fold
in dry ingredients just until batter is moist. Do not overmix. Spoon into
greased or paper-lined muffin tins and bake about 25 minutes at 350 until
lightly browned.
